Directions
1. To make the grilled chicken fajitas: Combine lime juice, oil, garlic, cumin, salt, and chili in a large shallow plate or bowl; mix together. Add the chicken thighs and let marinate for 30 minutes.
2. Heat a large skillet on medium-high heat. Add a drizzle of olive oil and sear the chicken thighs on both sides until golden, charred, and cooked through (count about 8 minutes per side, depending on the thickness of your chicken thighs). Flip them a couple of times while cooking so they get a nice even color.
3. Transfer cooked chicken thighs to a warm plate or a cutting board, loosely tent with foil, and let rest before slicing into strips. Garnish the grilled chicken fajitas with lemon slices and freshly chopped cilantro and serve with tortillas, grilled peppers, rice… Enjoy!

Tips for the chicken fajitas recipe
A flavorful marinade and a quick sear make for these easy homemade chicken fajitas. Here are a few tips to make the best chicken fajitas ever!
- Make sure to marinate for a least 30 minutes so the chicken meat is loaded up with delicious spicy flavors.
- To cook the chicken fajitas, sear the chicken thighs on a hot cast iron pan – you can also use a hot grill –, and let them rest a few minutes before slicing, this will allow the juices to flow back through the meat.
How to serve the chicken fajitas?
Fajitas are usually wrapped in tortillas, but feel free to get creative! You can serve these grilled chicken fajitas with a rice bowl or a salad instead. This really is a perfect quick dinner or meal prep solution!
Can we use chicken breasts instead of chicken thighs?
Yes, of course! We prefer chicken thighs because they tend to be moister and more flavorful, but chicken breasts will work very well for this recipe. Make sure not to overcook the chicken breasts otherwise, your chicken fajitas will be a little dry.
