If you are familiar with fennel, this soup will delight your taste buds. What a soup! I had never tested this version of fennel soup before, so it’s a first try… and it’s downright delicious! Really quick and easy soup to make.

Ingredients list for Fennel Soup
- 1 fennel bulb
 - 1 large potato
 - parsley
 - an onion
 - olive oil
 - 1 clove garlic
 - salt and pepper
 - 1/2 cube of chicken stock
 
Cooking instruction: Fennel Soup
Heat 2 tablespoons of good olive oil in a pan and fry chopped onion and fennel, cut into small pieces.
Once the vegetables are lightly colored (2 or 3 minutes), add a diced potato, garlic, and some sprigs of parsley.
Cover with 2 pints (1 liter) of water and a cube of chicken stock.
Cook slowly over low heat for 30 minutes …
Mix with a hand blender and it’s ready!
