Instant Pot Potatoes recipe

Cooking, or more exactly, steaming potatoes in the Instant Pot is a foolproof way to get your favorite spuds on the table in no time. Here we cook potatoes under pressure for 18 minutes (plus time for the steam to build up) and then broil them in the oven, just like regular baked potatoes, for maximum crispiness. Feel free to garnish with your favorite toppings!

Why cook potatoes in the Instant Pot instead of the oven?

Baked potatoes are probably one of the world’s favorite side dishes, but we all know that baking a whole potato in the oven takes some time! So if you’re in a hurry, or want to make sure you get that fluffy inside, take the shortcut and cook potatoes in the Instant Pot, then broil them in the oven for the finishing touch with the toppings. You’ll get that perfect baked potato in half the time necessary!

Directions

1. To make the Instant pot potatoes: Place the metal trivet into your instant pot. Scrub the potatoes and prick them all over with a fork. Sprinkle the potatoes with salt all around. Pour the water into the instant pot and place the potatoes on top. You can stack them on top of each other if required.

2. Close and seal the lid of the Instant Pot. Set the Instant Pot to the manual mode, for 18 minutes (or a few minutes less if your potatoes are small).

3. Once potatoes are done, let the pressure release naturally. Then quickly release any remaining pressure and carefully open the lid.

4. For potatoes with crispy skin, arrange the cooked potatoes on a baking sheet and broil in the oven for 3 or 4 minutes until the skin is slightly crisp.

5. Cut the potatoes open and garnish with scallion, salt, pepper, red chili pepper flakes, and butter. Enjoy! ❤️

Tips for the Instant Pot potatoes recipe

  • If you like to eat potato skins, coating the spuds in salt makes the skins extra-crispy and flavorful once cooked and passed under the broiler.
  • The cooking time in the Instant Pot will vary depending on the size of your potatoes. We count 18 minutes for large spuds 15 for medium, and 12 for smaller ones.
  • Don’t forget to use the trivet that comes with your Instant Pot so your potatoes are not sitting in the water at the bottom.
  • Preheat your broiler while the potatoes are in the Instant Pot, so you don’t waste time!
