Directions
1. To make the Instant pot potatoes: Place the metal trivet into your instant pot. Scrub the potatoes and prick them all over with a fork. Sprinkle the potatoes with salt all around. Pour the water into the instant pot and place the potatoes on top. You can stack them on top of each other if required.
2. Close and seal the lid of the Instant Pot. Set the Instant Pot to the manual mode, for 18 minutes (or a few minutes less if your potatoes are small).
3. Once potatoes are done, let the pressure release naturally. Then quickly release any remaining pressure and carefully open the lid.
4. For potatoes with crispy skin, arrange the cooked potatoes on a baking sheet and broil in the oven for 3 or 4 minutes until the skin is slightly crisp.
5. Cut the potatoes open and garnish with scallion, salt, pepper, red chili pepper flakes, and butter. Enjoy! ❤️
