Ingredients list for the chicken skewers

  • 1 pound (450g) skinless, boneless chicken breasts

The marinade

  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon smoked paprika
  • Fresh cracked black pepper, to taste

The salsa

  • 6 ounces (200g) strawberries, hulled and sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons agave nectar
  • Fresh cracked black pepper, to taste

The pesto

  • Toasted almonds, chopped
  • 2 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Directions

Prepare chicken:
1. Cut chicken breasts into regular cubes. Prepare grill for medium-high heat.
2. Whisk the ingredients for the marinade in a large bowl and add chicken cubes. Add chicken and toss to coat. Allow to marinate for 30 minutes, then thread 5 or 6 chicken pieces onto each skewer.

The salsa:
1. Whisk together 3 tablespoons oil, lime juice, agave nectar, pepper to taste. Toss with strawberries and set aside.

The pesto:
1. Put all the ingredients in a blender and grind coarsely. Add olive oil to taste.

Grilling:
1. Transfer the marinade to a small saucepan. Bring to a boil, reduce heat, and simmer until reduced by half, 7–10 minutes.
2. Grill chicken, turning and basting often with reduced marinade, until cooked through, 8–10 minutes.
3. Remove from grill and transfer to a serving platter or individual plates. Top with pesto and strawberries and serve immediately.
