Directions

1. How to make the Crockpot beef chili recipe: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 4 minutes, breaking up the meat with a wooden spatula. Add garlic, onion, and chili. Cook, stirring regularly, until veggies are tender and fragrant, about 5 minutes.

2. Place the ground beef mixture into your slow cooker. Add in the beef stock, kidney beans, black beans, crushed tomatoes, diced tomatoes, chili powder, paprika, oregano, cumin, and Cayenne pepper. Season with salt and pepper to taste. Cover the slow cooker and cook the chili on HIGH for 4 hours, or on LOW for  6-8 hours.

Tips for the Crockpotbeef chili recipe

This slow-cooker beef chili recipe with beans is simple and easy to prepare. Here are a few tips to make it even better:

  • Use hot sauce like Sriracha or Cholula instead, or in addition to Cayenne if you like your beef chili very spicy (we do!).
  • You can use a mix of half beef, half pork. Ground turkey would also be a good substitute for the chili recipe.
  • Add a diced red or green bell pepper with the vegetables when sautéing.
  • Dry toast the spices in a skillet if you have some time; this helps develop their flavor before adding to the beef chili.

Best beef chili toppings

Here are a few suggestions for chili toppings, feel free to customize:

  • Cheese: we like cheddar, mozzarella, and crumbled cotija cheese.
  • Tortilla chips: to add a bit of texture and crunchiness.
  • Diced, or sliced avocado brings smoothness with a nice, refreshing contrast to this crockpot chili.
  • Sliced jalapeños
  • Chopped scallion adds a bright, fresh flavor.
  • Cilantro: freshness guaranteed!

How to store the Crockpot beef chili leftovers?

You can keep the leftover chili for 2 days in an airtight container stored in your refrigerator. Reheat on the stove with a few drops of water to loosen the sauce. Note that this chili freezes really well.

I’ve made this about 5 times now with some tweaks (halfing the recipe but doubling the spices along with sriracha) and using diced green Chili’s instead of poblano. It comes out so good every time!
