Directions

1. To make the pesto pasta: Preheat your oven to 400ºF (200ºC). In a rimmed baking sheet, toss cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper. Spread the grape tomatoes in one layer. Roast the tomatoes for about 20 minutes, until blistered, while you prepare the pasta.

2. Bring a pot of water to boil. Cook pasta according to package instructions. and drain.

3. In a large pan, heat 2 tablespoons olive oil and cook onion, until slightly caramelized. About 5 minutes. Add the garlic an cook for one minute more.

4. In the meantime, combine cream and pesto in a bowl.

5. Add cooked and drained pasta, creamy basil pesto, parmesan, and roasted tomatoes to the same pan that you used to cook the onion. Stir gently and bring to simmer to coat the pasta with sauce.

6. Season with extra salt, pepper, and crushed red pepper flakes, if desired. Serve the creamy pesto pasta with roasted tomatoes immediately. Enjoy! ❤️
