Ingredients for the baked feta and tomato recipe

  • Feta cheese: Creates that rich and creamy base. So cheesy, so good!
  • Grape tomatoes: Juicy, sweet, and not acidic at all. Cherry tomatoes are great too.
  • Garlic: Fresh is better.
  • Olive oil: Extra virgin, cold-pressed is better.
  • Italian seasoning and fresh thyme: For that irresistible Mediterranean flavor. Herbes de Provence works great, but you might want to lower the amount as thyme and lavender yield powerful flavor.
  • Fresh basil: Adds a fresh flavor to the baked feta. You can also use fresh parsley.

How to make baked feta

Baked feta is a simple dinner add-on that is simply made by adding grape tomatoes to a baking dish and drizzling them with olive oil, salt, and pepper. Add a block of feta into the center, add herbs and bake until the tomatoes are blistering. Then break up the tomatoes and feta and mix until creamy with a wooden spoon or spatula. Garnish with fresh chopped garlic and basil. Easy!

1. To make the baked feta with tomatoes: Preheat your oven to 400ºF (200ºC). Add grape tomatoes to a baking dish. Add minced garlic, drizzle with olive oil, season with salt and pepper and toss to coat.

2. Arrange a space in the center of the tomatoes and add the block of feta. Season with pepper, Italian seasoning, and thyme and bake for 30-35 minutes or until tomatoes are juicy and most of them have burst or are about to burst. If desired, broil for the last 1-2 minutes to get a nice golden brown color.

3. Remove the baking dish from the oven, add half of the basil, and then stir with a spoon until the tomatoes and feta are nice and creamy.

4. Top the baked feta with remaining fresh basil and season with red chili pepper flakes and black pepper to taste. Serve the baked Feta immediately. Enjoy! ❤️
