Count a small zucchini per person.
Ingredient list
For 2 persons
- 2 zucchinis
- 1 large onion
- 4 cloves fresh garlic
- 1 sprig of parsley
- Fleur de sel (or coarse salt)
- Freshly ground pepper
- A drizzle of olive oil
Cooking instructions
Wash zucchini, wipe and cut the 2 ends. Cut into quarters lengthwise then detail in small cubes, book.
Mince the onion, make them color in your wok or skillet with olive oil. Once the onion becomes transparent, add the diced zucchinis, then chopped garlic. Add salt and pepper and cook over medium heat for about twenty minutes. Zucchinis are cooked when they are melting and colorful. Add the sprigs of parsley at the last moment to keep its freshness.
You can use these pan fried zucchinis to accompany grilled chicken fillets brushed with sunflower and macadamia oil, salt and pepper.
It’s very good… and very easy to do!
