Directions

1. To make this lemon garlic spinach recipe: Heat a skillet with a little olive oil. Add the minced garlic and cook until fragrant.

2. Add spinach and season with salt, pepper, red chili pepper flakes (if using), and lemon juice and saute spinach for 2-3 minutes over medium-low, until wilted. Adjust seasoning if needed. Add a sprinkle of parmesan if you like (optional).

  • Do not overcook the spinach!  Once it wilts, toss it around with all the ingredients and serve immediately.
