Ingredients list for the roasted broccoli salad
- 1 bunch of broccoli heads, florets only, finely chopped
- 1/2 cup raw pine nuts
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt and fresh cracked black pepper, to taste
- 3 oz (85g) feta, crumbled or diced
- 2 tablespoons dried cranberries
- Strawberries, sliced
- 1 avocado, sliced
The salsa dressing
- 2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/4 red onion, diced
- 1 tomato, seeded and diced
- 1 jalapeño, finely diced

Directions
1. To make the roasted broccoli salad: Preheat your oven to 425ºF (220ºC). On a large rimmed baking sheet, toss broccoli, olive oil, oregano, salt, and pepper. Spread into an even layer and roast for 15 minutes, until broccoli is just beginning to char. Add to a large salad bowl and cool for 10 minutes.
2. Add feta, avocado, strawberries, and dried cranberry into the salad bowl.
3. For the dressing: In a small bowl, combine lemon juice, olive oil, red onion, and tomato. Add to the broccoli salad and gently toss to combine. Adjust seasoning with salt and pepper if needed. Serve the roasted broccoli salad immediately, enjoy!

We enjoyed this a lot. I got confused when it said to add the garlic and there is no garlic in the recipe ingredients, so I left it out. But, otherwise an excellent summer salad!
