- 1 1/2 cup orzo
- 2 cups cherry tomatoes, diced
- 6 oz mild white cheddar, cut into small cubes (or mozzarella, swiss…)
- 3/4 cup green olives, sliced
- 1/2 teaspoon grated garlic (optional)
- 1 orange or red bell pepper, diced
- 1/2 cup sliced red onion
- 1/2 cup fresh basil, chopped (optional)
- 2 to 3 tablespoons capers + 1 tablespoon caper water from the jar
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon
- 1/3 cup olive oil
- 1 tablespoon fresh lemon juice

Directions
1. To make the orzo pasta salad: Cook pasta according to package directions, in boiling salted water. Drain the orzo and toss with a little oil to prevent sticking. Arrange all the salad ingredients in a large salad bowl.
2. Mix olive oil, lemon juice, and a little caper water in a jar, then pour over the orzo salad.
