Directions

1. To make the garlic butter shrimp pasta: Cook spaghetti pasta al dente, according to package directions. Add shrimp, 1 tablespoon olive oil, ancho or cayenne pepper, minced garlic, and black pepper. Toss to coat the shrimp and set aside for 10 minutes. 

2. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the shrimps in a single layer and sear for 1 minute. Flip shrimp and sear the other side for 1 minute.

3. Deglaze the skillet with vegetable stock, and cook for 1 minute, scraping any browned bits with a wooden spoon.

4. Add butter to the shrimp and stir until melted. Sprinkle with Italian seasoning and red chili pepper flakes.

5. Add spinach to the shrimp and toss until wilted,  about 30 seconds.

6. Arrange the garlic shrimp over the cooked and drained spaghetti pasta. Add a sprinkle of red chili pepper flakes and parmesan on top. Serve your garlic shrimp pasta immediately. Enjoy!

This garlic butter shrimp pasta recipe with spinach is so easy to make. All you need is 20 min to whip this up! Here are a few tips to make it even better and add it to your weekly meals rotation:

  • You can marinate shrimp longer if you have time: Simply transfer shrimp to the fridge and chill covered for 30 minutes or up to 1 hour.
  • The garlic shrimp cook quickly. All you need is about one minute per side, depending on the size of your shrimp. As soon as the shrimp turn pink and opaque, they’re done. So cooking on two fires with spaghetti pasta at the same time is manageable.

To reheat, add to a skillet over low heat until the shrimp pasta is reheated. You may want to add a few drops of water to loosen the sauce. Alternatively, you can make a shrimp pasta bake with the leftovers: Dump everything in a baking dish with 2 tablespoons of water and bake the shrimp pasta in the oven at 400ºF (200ºC) until heated through.
