Why this recipe works

  • The meatballs cook in a single batch and are ready to throw into your favorite sauce, pasta, soup, salads, meal preps, or sandwiches. You can even freeze them for later.
  • No need to add breadcrumbs: we use an egg to bind the ground beef, which keeps them gluten-free and low in carbs.

Directions

1. Preheat your oven to 400ºF (200ºC). Lightly spray a baking dish with cooking spray.

2. Combine ground beef, mozzarella, parmesan, egg, onion powder, garlic, Italian seasoning, black pepper, and crushed chili pepper flakes in a large salad bowl. Use a cookie scoop to form the meatballs into the same size, then arrange them in the baking dish.

3. Bake the meatballs for 15 to 20 minutes or until cooked through. Remove from the oven and brush the meatballs with the cooking juices and rendered fat.

4. Return the meatballs to the oven and finish baking for 5 to 10 minutes, making sure not to dry them out. A quick run under the broiler can help to make them crispier on the outside.

5. Remove from the oven and serve the baked meatballs with a side salad, rice, pasta, or veggies. Enjoy!

Pro tips

  • We use 80/20 ground beef, meaning there is a ratio of 80% muscle, 20% fat. 90/10 makes for leaner meatballs, but they tend to break up more easily.
  • For juicier meatballs, you can use a mix of 2/3 ground beef and 1/3 ground pork instead.
