  • 1 1/2 cups unsweetened coconut milk or plain yogurt
  • 1 1/2 cups frozen mixed berries 
  • 1 small raw red beet, peeled and cut into wedges
  • 1 medium frozen apple, broken into large pieces
  • 1 teaspoon vanilla extract (optional)
  • Honey or maple syrup, to taste (optional)
  • Walnuts, for garnish

Directions

1. Place coconut milk (or yogurt) in a blender; top with berries, beet, apple, and vanilla extract. Blend, slowly increasing speed to high, until the mixture is completely smooth.

2. Taste and add maple or honey if more sweetness is desired. Blend again for about 10 seconds if adding sweetener. If the mixture gets too thick, add 1/4 cup water and blend until smooth.

3. Let mixture stand 1 minute before serving. Garnish the apple berry beet smoothie with walnuts on top. Enjoy!
