Directions

1.  Preheat your oven to 350ºF(175ºC). In a large bowl beat together the butter, white and brown sugar, until fluffy. 

2. Mix in the egg and vanilla extract. 

3. With the mixer on low speed, carefully beat in the flour, baking soda, and salt. Incorporate the oats and chocolate chips progressively. 

4. Form the cookies dough into balls about 1 – 1.5 tablespoons in size. Place balls 2 inches apart on a lined cookie sheet. Do not try to flatten the balls, the dough will spread out during baking. Bake oatmeal cookies for 8-10 minutes or until the tops are just set. Remove from oven and cool on a wire rack. Enjoy!

Note: If chilling the cookies dough for thicker cookies: After incorporating the oats, cover the bowl with plastic wrap and place in the fridge for 2 hours or overnight. When ready to bake, then proceed from step 4.
