Ingredients list for the oatmeal cookies

  • 3/4 cup quick oats
  • 1/2 cup old-fashioned oats
  • 1/2 cup dark chocolate chips
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1/3 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

1.  Preheat your oven to 350ºF(175ºC). In a large bowl beat together the butter, white and brown sugar, until fluffy. 

2. Mix in the egg and vanilla extract. 

3. With the mixer on low speed, carefully beat in the flour, baking soda, and salt. Incorporate the oats and chocolate chips progressively. 

4. Form the dough into balls about 1 – 1.5 tablespoons in size. Place balls 2 inches apart on a lined cookie sheet. Do not try to flatten the balls, the dough will spread out during baking. Bake for 8-10 minutes or until the tops are just set. Remove from oven and cool on a wire rack. Enjoy!

Note: If chilling the dough for thicker cookies: After incorporating the oats, cover the bowl with plastic wrap and place in the fridge for 2 hours or overnight. When ready to bake, then proceed from step 4.
