  • 1/2 green cabbage head
  • 1 tablespoon olive oil
  • 1/2 onion, minced
  • 1/2 teaspoon Italian seasoning blend

  • 1/2 teaspoon Cayenne pepper, optional
  • 4 cups chicken or vegetable broth
  • 1 cup Marinara sauce
  • Fresh cilantro or parsley, for topping

How to make the cabbage turkey meatballs soup?

As with many recipes, we start by sauteing some onion, until fragrant and translucent. Add shredded cabbage and cook for a couple of minutes before adding broth, tomato sauce, and spices

Bring the soup to a simmer and cook, semi-covered for 15-20 minutes.

Add the cooked turkey meatballs to the soup and cook for 5 to 10 minutes more until turkey meatballs are reheated.

  • Feel free to use chicken meatballs if you prefer!
  • You can add more vegetables besides onion and cabbage: celery and carrot will make this turkey soup more hearty!
  • If you like to add a kick of spice and Cayenne is not your thing, try a tablespoon of Sriracha.

Directions

1. To make the cabbage turkey meatballs soup: heat olive oil in a large pot over medium heat and cook onion, stirring regularly until fragrant and translucent.

What to do with turkey meatballs soup leftovers?
