Balsamic roasted carrots

These roasted carrots are sweet, sticky delicious! They cook super fast because cut into smaller pieces, and the balsamic glaze is easy to make. Feel free to add fresh herbs like thyme or rosemary to infuse the glaze.

How to roast carrots

Roasting carrots cannot get any easier!

Peel the carrots, trim ends then cut into 2 or 3 sections. Cut each section in half lengthwise, then cut into quarters lengthwise. Finish by diced into small cubes.

Arrange carrots on the baking sheet, add olive oil, salt, and pepper, and roast in the oven for 20 minutes at 400ºF (200ºC). In the meantime make the balsamic glaze in a saucepan.

When roasted carrots are done, drizzle the glaze over and toss to coat well. Easy!

Directions

1. To make the balsamic roasted carrots: Preheat the oven to 400ºF (200ºC).

2. Place the diced carrots on a rimmed sheet pan lined with parchment paper. Drizzle with 1 tablespoon olive oil. Add salt, pepper, and toss the carrots until coated. Transfer the carrots to the oven and roast for 20 minutes, stirring once halfway through roasting time.

3. While the carrots are roasting, prepare the honey balsamic glaze. Add the honey and balsamic vinegar to a small saucepan and stir to combine with a wooden spoon. Simmer the glaze over medium-low heat for about 10 minutes. Remove the saucepan from the heat, then add in the butter and mustard (if using). Stir until the butter has melted into the glaze and set aside.

4. When the carrots are finished roasting, drizzle the honey balsamic glaze over carrots and toss to coat well. Transfer the balsamic roasted carrots to a serving dish and serve warm. Enjoy! ❤️

What to do with roasted carrots leftovers

You can keep the balsamic roasted carrots leftovers for up to 4 days in an airtight container in your refrigerator. Reheat in the oven. Mix in the leftover carrots into your soups or vegetable purees!
