How to  make the potato bacon and green beans:

1. Peel the potatoes and cut them into medium-sized cubes. Trim the green beans and cut them in half. Cut the bacon into matchsticks.

2. Blanch the diced potatoes in a large pot of boiling salted water for 8 minutes.

3. After 5 minutes, add the green beans for 3 minutes.

4. When done, drain potatoes and green beans and set aside.

5. Meanwhile, sauté the bacon in a large skillet until crispy. Remove the bacon and place it on a plate lined with a paper towel to absorb excess fat. Discard most of the rendered bacon fat from the skillet, but keep some to sauté the onion and shallot.

6. Add onion and shallot to the skillet with the remaining bacon fat and sauté until translucent and fragrant.

7. Add potatoes, green beans, and crispy bacon to the skillet and season with salt, pepper, garlic powder, and taco seasoning. Cook for 3 minutes more, stirring regularly with a wooden spoon.

8. Deglaze the skillet with 3 tablespoons of vegetable broth. Give a quick stir to the bacon and veggies.

9. Serve the bacon, potato, and green beans immediately. Enjoy! ❤️
