Directions
1. To make the sheet pan meatloaf with veggies: Preheat your oven to 400ºF (200ºC). Coat a half-sheet pan with cooking spray and sprinkle with a bit of breadcrumbs, this will help absorb the juices during cooking. Add the vegetables to the sheet pan and toss with olive oil, salt and pepper.
2. In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine and form several thick patties – these are the “mini meatloaves”.
3. Arrange the meatloaf patties evenly into the prepared sheet pan. Arrange the vegetables around the meatloaves
4. In a small bowl, mix all of the ingredients together for the sauce. Brush the mixture evenly over the top of the meatloaf
5. Bake until the meatloaf is cooked through and slightly browned, 20 to 25 minutes. The vegetable should be crips-tender and the meat should reach an internal temperature of 160ºF (71ºC).
