Key Ingredients for the Apple Feta Salad

When building a salad, we like to keep things textured and balanced, so this salad is a perfect blend of sweet and crunchy – Apple brings both! Chunky yet light on the stomach, it will leave room for the rest of the menu. Here’s the basic ingredients list:

  • Greens: We use a mix of greens – baby lettuce, baby arugula, spinach, and chard.
  • Apple: We used a Gala apple. Honey Crisp or Envy are also great varieties.
  • Feta Cheese: brings the saltiness you need to balance with the sweetness. Crumbled goat cheese can work too if you’re leaning on the creamier side.
  • Nuts: Pecan and walnuts
  • Dried cranberries and pomegranate seeds
  • For the dressing: apple cider vinegar, olive oil, herbs, salt, and pepper

How to make the apple feta salad

Combine all the ingredients in a large salad bowl. Pour the dressing over, and that’s it!

For mixing the apple cider vinaigrette dressing, we recommend using a mason jar with a lid. Combine all the ingredients for the dressing, close the lid tightly, and then shake vigorously to emulsify the sauce. Store any leftover dressing in the mason jar in the refrigerator.

Tips for the apple feta salad recipe

  • If you have time, toast the pecans and walnuts in a dry skillet over medium heat until fragrant. It will concentrate the nutty aromas. Add a pinch of Cayenne and cinnamon.
  • Feel free to throw in other greens like baby kale or spinach.
  • Want a few extras? Add croutons, fried onion, pine nuts or pumpkin seeds for even more crunch!
