If you like juicy fruits on a slightly crunchy shortbread pastry, you might like this mirabelle plum pie. To minimize excesses we will make a lighter pastry in fat… but enriched with some Speculoos… guaranteed success!
Ingredients list : plum pie
For a 2:
- 1 cup (200g) flour
- 2 ounces (60g) 40% fat butter
- 1/2 teaspoon of salt
- 1 teaspoon yeast
- 1/3 cup of water
- Mirabelle plums
- 7-8 speculoos cookies
In a bowl, combine flour, salt and yeast.
Melt butter in a saucepan.
Pour water and melted butter in the middle of the flour. Mix with a wooden spoon. Finish kneading by hand, then form a ball.
Refrigerate for 30 minutes.
Then spread in your baking pan.
Crumble the Speculoos cookies, place in the bottom of the mold and garnish with pitted plums.
Put in preheated oven 360°F (180°C) for 25-30 minutes.
Sprinkle with granulated sugar.
You can serve it lukewarm or cold. Enjoy!
