How to make the white bean and carrot salad

The method to make this cannellini beans and carrot salad is very easy: First, peel and slice the carrots. Then sauté carrots in a skillet before adding shallots, maple syrup, lemon juice, and salt. Maple and lemon juice will act together to deglaze the carrots and make the dressing.

Transfer everything to a salad bowl or shallow plate and finally combine with white beans (rinsed and drained), almonds, and dill.

1. To make the White Beans and Carrot Salad: In a skillet, heat olive oil over medium-high heat. Sauté sliced carrots, stirring frequently, until carrots are just soft and beginning to brown on the edges, about 8-10 minutes.
