How to make the cinnamon sweet potatoes:

1. Combine sweet potato cubes in a large mixing bowl with olive oil, maple syrup (or honey), cinnamon, paprika, and cumin.

2. Heat olive oil in a skillet and saute the shallot until fragrant – 1 minute.

3. Add the sweet potato cubes and saute for 10 – 12 minutes, until cooked through, stirring regularly.

4. Adjust seasoning with kosher salt, and sprinkle chopped parsley on top.

5. Transfer the cinnamon sweet potatoes to a serving dish and serve immediately or keep warm until serving. Enjoy!
