I thought I had toured too much with zucchini, but I came across this recipe for an easy, fast, and delicious zucchini quiche, perfect for a picnic basket.

Ingredients list for the zucchini quiche recipe

  • 1 lb (500 g) organic zucchini
  • 2 organic eggs
  • 5 tablespoons of grated Parmesan cheese
  • 4 tablespoons of organic flour (or Kamut Spelled)
  • 1 large organic shallot
  • 1 clove garlic (…organic, of course)
  • 2 tablespoons of chopped chives
  • 1 tbsp chopped basil
  • 3/4 cup (200 ml) semi-skimmed milk
  • Olive oil
  • Salt and pepper

Directions

1. Wash zucchini and cut them into large dice, then chop them  coarsely
2. Put the zucchini in a bowl with salt to disgorge them
3. Finely chop the shallot and garlic.
4. Beat eggs, add the cheese, then flour and milk.
5. Add shallot and garlic and mix.
6. Press the zucchini between your two hands to extract all the water.
7. Stir the zucchini into the preparation, then add chives and chopped basil.
8. Salt and pepper. Add a good drizzle of olive oil and mix.
9. Grease a rectangular baking dish and pour the mixture into it.
1o. The thickness of this one should be about 1-2 cm at most.
11. Add the olive oil and bake for 20 to 25 minutes in a hot oven at 410 °C (210 °C).
12. The top of the quiche should be golden brown, as well as the edges.
13. To taste barely warm or cold.

Tips

It is important to drain the zucchinis well, as they will release a lot of water, resulting in a very muddy dough that will not bake well.
We can vary the cheeses to replace Parmesan: pecorino, Grana Padano, dried goat cheese, tomme, or feta.
You can also put fresh mint, sage, fresh thyme, marjoram, or oregano as aromatic herbs.
