How to Fix a Soggy Zucchini Pie?

Some cooks commit these two errors with zucchini: peeling the vegetable, then running it under water. Zucchini absorbs the liquid then exsude all the juice during the cooking, making your zucchini quiche soggy. In fact, there is no need to peel it. So skin not only enables zucchini to keep their shape in cooking, but also brings color to your dish. To cook zucchini, wash them under water quickly, then wipe them with a clean, damp cloth. Cut into slices, fry in a pan with a little garlic and olive oil, and add them to your pie. If you are worried that they still make too much water, sprinkle your pie dough with semolina to absorb the excess liquid.
