1. Learn how to make the pie dough

A pie is a dish consisting of a cooked paste and a sweet or savory filling. The pastry is prepared from a mixture of pastry flour, yeast-free, fat-based butter or margarine, water or milk, sugar or salt. There are three kinds of pie crust: the pastry, the puff pastry, and the pastry.

How to make the pie crust?

In a bowl, sift your flour and add sugar and/or salt, and pre-diced fat. Mix these ingredients with your fingertips, taking care not to knead until the mixture resembles breadcrumbs. Add water and knead the dough. Stop kneading when the dough is smooth. Flatten the resulting paste, place it in a mold, and bake with or without filling.

2. How to Cook te Alsacian pie

Cooking is the most important step in the preparation of the Alsatian tart. Unlike a normal pie, cooking certain varieties of Alsatian tart is twice as time-consuming and sometimes requires different temperatures. It is therefore important to follow the cooking times given in recipes. Also, do not place your pie too close to the floor of your oven, as you might have a burnt crust.

3. Some tips for a successful pie

There are different ways to line an Alsatian tart. The filling can be sweet or savory. It can consist of whole fruit or pieces, or be cooked in sauce, cream, or custard. If you opt for an Alsatian pie salt topping, you can compose with vegetables, seafood, meat, or sausage. Here are also some tips that will help you get an even finer and softer paste:

  • Replace water with milk, preferably frozen, and your dough will be melting;
  • Add 1 tablespoon of oil when you add the butter.
  • Add one egg yolk, lightly beaten, when adding water or milk;
  • Wrap the dough in plastic wrap and let it rest for half an hour in the fridge.

4. Easy recipe for Alsatian tart

If this is your first Alsatian tart, start with an apple pie. It includes several steps that will guide you to succeed more pies. Here are the ingredients you need to learn this recipe for apple pie in Alsace:

For the pastry:

  •  2 1/2 cups (250 g) of flour,
  • 1/2 cup (125 g) of unsalted butter,
  • a pinch of salt,
  • a tablespoon of sugar (20 g),
  • 3 tablespoons of ice water.

For the filling:

  • 4 large apples or 1 kg of Granny Smith,
  • peeled,
  • cored and cut into wedges,
  • 2 tablespoons of vanilla sugar,
  • 2 eggs,
  • 1/2 cup (125 ml) cream,
  • 1/2 cup (125 ml) of milk.

Regarding preparation, you should prepare the pastry and spread it into a buttered and floured mold. Prick the bottom with a fork, then place the dough in a circle around the apple wedges. Sprinkle with a tablespoon of sugar, then place in an oven preheated to 360°F (180°C) for 10 minutes, or until the apple slices are tender.

Meanwhile, beat eggs with a whisk, cream, vanilla sugar, and milk. Remove pie from oven and pour cream over apples. Put it in the oven, bake for 25 minutes, and lower the temperature to 320°F (160°C) after 10 minutes or until the cream is thick.
