Grilled Zucchini skewers are so quick and easy to make! And that BBQ sauce is AMAZING! It’s like backyard barbecue, but with a vegetarian twist! No grill? You can easily saute this on a pan in minutes.Yum !!!

Ingredients list for the Grilled Zucchini skewers

  • 3 zucchini, cut into chunks
  • 2 bell peppers, diced
  • 3 tablespoons olive oil
  • 3 tablespoons lime juice
  • Salt and fresh cracked black pepper
  • 1 teaspoon Italian seasoning

The sauce

  • 1/4 cup (60 ml) BBQ sauce of your choice
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh grated ginger
  • A pinch of salt and black pepper
  • A pinch cayenne pepper (optional)

Directions

1. Preheat your grill and combine olive oil, lime juice, salt, pepper and Italian seasoning in a large bowl. Marinate vegetables into the olive oil and lime juice mixture.

2. In the meantime, combine the bbq sauce with all ingredients together (lime juice, olive oil, honey, fresh ginger, salt and pepper, cayenne pepper).

3. When ready, drain veggies from marinade and thread onto skewers. Grill on all sides for 2 – 3 minutes, then brush generously with the bbq sauce and finish finish, until slightly charred but still crunchy.

4. Serve grilled veggies skewers as is or over rice, over cauliflower rice, and garnish with fresh herbs, such as  cilantro, parsley or green onion and the remaining sauce on the side. Enjoy!

Note: Grilled vegetables are better when fresh, but they will keep in the refrigerator up to 2-3 days and can be re-used in a salad.
