- 1 lb (450g) lean ground beef
- 1 tablespoon olive oil
- 1 teaspoon salt & pepper
- 1 small onion, chopped
- 3 cloves garlic, halved
- 1 cup diced tomato
- 1 tablespoon chili powder
- 1 teaspoon Italian seasoning
- 1 can large green chiles, roughly chopped
- 5 cups (1 1/4 l) beef broth
- 4 oz cream cheese
- 1 cup heavy cream
- 2 oz Colby-Jack cheese, shredded
- 2 tablespoons chopped scallion

Directions
1. To make the green chile cheeseburger soup: Heat the olive oil in a large pot over medium-high heat. Add onion to the pot and cook for 3 minutes, until softened.
2. Add the ground beef to the pot and season with salt and pepper to taste. Cook, breaking up the ground beef with a spoon, until browned and mostly cooked through. Add the garlic and cook for 30 seconds more.
4. Add the chopped green chile, diced tomatoes , chili powder, Italian seasoning, and beef broth to the pot; bring the cheeseburger soup to a simmer.
5. Cook the soup for 25-30 minutes. Add shredded cheese, creamy cheese, and heavy cream into the soup and stir until completely melted. Taste and season with salt and pepper if needed.
6. Garnish with more shredded cheese and parsley and serve the green chile cheeseburger soup immediately. Enjoy!

I won a soup contest with this recipe, and now it is one of our staples! We live in Colorado so I get a pound of fresh chopped green chiles from our farmers market and add it instead of canned. Also throw a chopped jalapeno and some 3-pepper seasoning for added heat. Everyone always asks me for the recipe and it is relatively easy! Thank you!
