How to make fish soup

The key to making this fish soup is to simmer the aromatics and the soup base before adding the fish toward the end. This way, you have perfect flaky fish that tastes super fresh. Frist cook onion, celery, and carrot in a Dutch oven, then add garlic, tomatoes, and water with bouquet garni. Simmer until the veggies are crisp-tender before adding the fish cut into pieces, and cook for 5 to 10 minutes. Adjust seasoning add chopped parsley, and serve!

What kind of fish to use for the fish soup

A firm white fish fillet such as cod, halibut, sea bass, or red snapper will work great in this fish soup. Feel free to use a mix of several fish. Use fish fillets with skin removed. If you cook with frozen fish fillets, thaw them in the refrigerator overnight prior to making this soup.

5. Season the white fish with salt and pepper, and stir into the soup. Simmer for 5 to 10 minutes (depending on the thickness of the fish fillets) or just until fish flakes easily when poked with a fork. Remove the fish soup from the heat, and stir in cilantro. This was a great tasting soup! I used half water and half chicken broth and added some chopped beet greens (any greens would do though).....delicious. The cilantro and lime are a must for added flavor.
