- 3/4 cup quick oats
- 1 cup plain almond milk
- 1/2 cup coconut milk
- 1 tablespoon smooth peanut butter + for garnish
- Few drops vanilla extract, optional
- Garnish: fresh raspberries, vegan chocolate chips, maple syrup

Directions
1. To make the chocolate peanut butter oatmeal: Combine the 1-minute oats, plain almond milk, and coconut milk, in a saucepan over high heat. Cook, stirring occasionally until the mixture comes to a simmer. Add in the peanut butter, and vanilla extract, stirring to combine.
2. Cook for half a minute, until the oatmeal comes to your desired consistency, then remove from heat. If your oatmeal is too thick, add a splash of almond milk or coconut milk and mix well to combine.
3. Transfer the oatmeal to a serving bowl. Top the chocolate peanut butter oatmeal with a spoonful of peanut butter, raspberries, and chocolate chips, and a good drizzle of maple syrup, if you like. Enjoy!
