- 10 oz (300g) chicken tenders or chicken breast cut into strips
- 2-3 tablespoons olive oil or unsalted butter
- 1/4 teaspoon crushed red pepper flakes, optional
- 1 teaspoon smoked paprika or more, to taste
- Kosher salt and freshly ground black pepper, to taste
- 1 teaspoon Italian seasoning
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 4 Roma tomatoes, roughly chopped
- 5 oz (150g) fresh spinach
- 1/2 cup (125ml) pasta cooking water
- 1/2 cup (125ml) chicken stock
- 8 oz (220g) linguines, uncooked

Directions
1. To make the chicken pasta recipe with tomato and spinach: Cook pasta according to package instructions, until al dente. Drain pasta, keeping 1/2 cup of the pasta water for later.
2. Add 2 tablespoons butter or olive oil to a large skillet, on medium-low heat. Season chicken to taste with salt and pepper, then add to the skillet and cook until slightly golden on all sides. Add red pepper flakes, paprika, and Italian seasoning in the skillet and cook on medium heat until chicken is cooked through – about 5 minutes. Remove cooked chicken from the skillet and set aside.
3. In the same skillet, add chopped onion and garlic and cook until fragrant, about 1 minute (add a bit of butter if necessary). Add chopped tomatoes, cook for 2 minutes more. Add pasta water and chicken stock and bring to a simmer. Reduce for 3 minutes, then add spinach. Adjust seasoning, if needed.
4. Add pasta to the skillet, then add chicken and mix well. Reheat over low heat, adjust seasoning with salt and pepper if necessary. Sprinkle with grated cheese just before serving the tomato spinach chicken pasta. Enjoy!
