Directions

1. Preheat your oven to 400ºF (200ºC) and place the rack in the middle position.

2. In a small bowl, mix the spice rub ingredients together: brown sugar, smoked paprika, garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper.

3. Arrange the pork chops in a baking dish and season generously with the spice rub on all sides, rubbing with your fingers to coat well. Place diced butter over the seasoned pork chops. Add 1/4 cup of stock to the bottom of the baking dish.

4. Bake for approx. 20 minutes, uncovered. The pork chops should be done when they reach 145ºF (63ºC) as measured with a meat thermometer. See notes for doneness and cooking times.

5. Let the baked pork chops rest, covered, for 5 minutes before serving so the juices reabsorb into the meat, making it tender and juicy. Serve with the pan juices poured over top. Enjoy! ❤️
