- 3 large pork chops (we used boneless)
- 1 teaspoon brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup unsalted butter, diced
- 1/4 cup low-sodium stock (beef or vegetable)

Directions
1. Preheat your oven to 400ºF (200ºC) and place the rack in the middle position.
2. In a small bowl, mix the spice rub ingredients together: brown sugar, smoked paprika, garlic powder, onion powder, chili powder, Italian seasoning, salt, and pepper.
3. Arrange the pork chops in a baking dish and season generously with the spice rub on all sides, rubbing with your fingers to coat well. Place diced butter over the seasoned pork chops. Add 1/4 cup of stock to the bottom of the baking dish.
4. Bake for approx. 20 minutes, uncovered. The pork chops should be done when they reach 145ºF (63ºC) as measured with a meat thermometer. See notes for doneness and cooking times.
5. Let the baked pork chops rest, covered, for 5 minutes before serving so the juices reabsorb into the meat, making it tender and juicy. Serve with the pan juices poured over top. Enjoy! ❤️

Recipe Tips
- If your pork chops are large or super thick, you can cut them in half just like we did in the pictures. Each piece will cook more evenly.
- A quick run under the broiler for 1 minute ensures nice crispy edges. Keep an eye on it so the pork chops don’t dry out.
How to keep pork chop leftovers
You can keep any leftovers for up to 2days in an airtight container in your refrigerator. Reheat in the microwave with a few drops of water to loosen the sauce, or cover in the oven at 350°F until heated through.

Recipe Notes
- If your pork chops are thin (less than 1/4-inch thick), check around 18 minutes of baking time. Thicker pork chops (thicker than 1-inch) may take longer, around 25 minutes. Cooking times also depends on your oven and bone-in pork chops can take a little longer to cook than boneless.
