1 can of smoked tuna (130g)

Spicy Shrimp Tapas
16 live shrimps
1 mango

1 piece of fresh ginger (3/4 inch – 2 cm) peeled

4 generous slices of crusty, country style bread

80g soft fresh goat cheese
4 Thin slices of cured ham

Chicken Tortilla Roll Ups
5 wheat tortillas (about 6-inch diameter)
5 thin slices of roast chicken breast
1 cup of cooked sushi rice
1 jar of dried tomatoes in olive oil
2/3 cup (150g) of cream cheese (Philadelphia for me)
1 bunch of basil
Arugula
1 bowl of water + rice vinegar
Cucumber And Goat Cheese Rolls
1 cucumber (preferably organic, because we’ll keep a bit of skin)
4 thick slices of goat cheese (sold as a small log)
6 pigeon heart tomatoes (elongated cherry tomatoes)

1 clove garlic (or 2)

1 handful of toasted pine nuts

1/2 pickled lemon in oil
1 clove of garlic
Thyme, salt and pepper.
Candied Tomatoes
1 lb (500g) cherry tomatoes
2 tablespoons of olive oil
1 tablespoons sugar
A few sprigs of thyme
Salt and pepper
Mini Ham & Blue Cheese Croissants
1 puff pastry sheet
4 slices of ham
3.5 to 4.5 oz (100-125g) crumbled blue cheese, or more if you like (Feta and Goat cheese are ok too)
Marinated Peppers With Garlic And Basil
15 of these beautiful mini red bell peppers
A clove of garlic
Salt and ground pepper
A great fruity olive oil
A few fresh basil leaves
