Serves 4 :
- 3 large tomatoes
- 3 1/2 oz (100g) bulgur
- 3 tablespoons olive oil
- Juice of 1 lemon
- 4 onions
- 2 bunches of parsley
- 1/2 bunch of mint
- Salt and pepper

Instructions
1. Pour the dry bulgur wheat into a bowl, cover with boiling water. Cover with a cloth and let sit until all water has been absorbed, about 30 minutes
2. While bulgur is cooking: slice onions, chop mint and parsley, cut tomatoes into small cubes. Pour into a bowl.
3. Pour bulgur into a large salad bowl and mix with all other ingredients and herbs, add salt, pepper, olive oil and lemon juice. Mix well.
4. Serve at room temperature or chilled and enjoy
