Strawberry-Lime Tom Collins – Sweet and refreshing, this strawberry cocktail is like liquid summer! All you need is some fresh lime juice, good gin, soda water, and a quick homemade strawberry simple syrup. The perfect refreshing summer drink to sip for your cookouts, parties and even picnics!

Ingredients list for the Strawberry-Lime Tom Collins

Strawberry syrup

  • 1 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 cup fresh strawberries, diced

Strawberry-lime Tom Collins

  • 1 cup strawberry syrup
  • 1 cup gin
  • 1/2 cup lime juice, freshly squeezed
  • Ice cubes
  • Soda water

Directions

1. To make the simple syrup: In a small saucepan, combine sugar, strawberries, and water and heat over medium-high heat, until sugar is dissolved. Simmer on low heat for 10 minutes, until strawberries are broken down. Remove from heat and allow to cool down to room temperate. Pass the mixture through a fine mesh strainer and transfer to a mason jar.  This makes you about 1 cup of strawberry syrup that you can keep in the fridge for several months.

2. To make the cocktail: Fill cocktail glasses with ice cubes. Divide gin and lime juice among the glasses and pour the strawberry syrup over. Stir until incorporated. Top with soda water. Enjoy!

Note: Make the simple strawberry syrup ahead of time, so you can assemble the cocktail at the very last minute.
