Ingredients: Scrambled eggs and smoked salmon

  • 8 Eggs
  • 2 tablespoons of heavy cream
  • 2 tbsp (30g) butter
  • 4 Slices of smoked salmon
  • 3 pinches of salt
  • Pepper

Preparation:  Scrambled eggs with smoked salmon

Place a knob of butter in a bowl (stainless steel bowl are better), break the eggs, add 3 pinches of salt.
Beat the eggs with a fork until the mixture becomes homogeneous.
Place the bowl in a water bath in a saucepan half full of water, heat the pan over low heat.
Stir continuously eggs with a spatula until the mixture becomes smooth and creamy.
Add the cream after cooking, grind the salt, add 2 turns from the pepper mill.Pour the scrambled eggs on soup plates then top with smoked salmon ribons.

Tip:

You can cook scrambled eggs directly on the fire provided you use a skillet or a heavy saucepan and over very low heat.
