  • 3 zucchinis
  • 1 / 2 white onion
  • 1 tablespoon of dried tarragon or fresh tarragon, finely chopped
  • 2 tablespoons of  sunflower oil
  • 1 tablespoon walnut oil
  • 1 tablespoon balsamic vinegar
  • salt and pepper

Directions

1. Cut zucchinis into cubes and cook them with steam or in plenty of salted water for 20 minutes. Ideally, the zucchini is cooked but still firm and does not crash to a pulp…
2. Prepare the marinade: white onion, finely chopped.
3. Add vinegar, sunflower oil, walnut oil, and tarragon.
4. Add salt and pepper, and mix thoroughly with a spoon while the zucchini is cooking…
5. Mix the zucchini with this mixture while still warm, gently lifting so that all the pieces are properly in contact with the marinade. Let 6. stand and serve warm or cool… The scent of tarragon, walnut oil, and crunchy white onions will make this salad your favorite for a while! Enjoy!
