Ingredients list for the oven-baked zucchini Fries
- 1 zucchini, halved lengthwise and sliced
- 1/2 cup of bread crumbs
- 1/4 cup of flour
- 1/2 cup grated parmesan
- 2 cloves garlic, finely minced (or dried garlic)
- 1/4 teaspoon of smoked paprika
- 2 tablespoons chopped fresh parsley
- 1 teaspoon cup Italian seasoning
- A pinch of Kosher salt (be cautious because parmesan is already salted)
- 1 large egg
- 1 large egg white
- Olive oil spray (about 1 teaspoon)
The spicy dip
- 3 tablespoons Sriracha sauce (or any other hot sauce you like)
- 2 tablespoons ketchup

Directions
1. To make the Baked Zucchini Fries: Preheat your oven to 450°F (230°C) and line a baking sheet with foil. Make the spicy ketchup dip by combining all the dip ingredients and refrigerate until zucchini are done.
2. Place zucchini slices to drain on paper towels for a couple of minutes. Mix crumbs and flour together along with paprika, parsley, Italian seasoning, parmesan, garlic, and salt.
3. Whisk eggs and egg whites in a bowl and season. Dip zucchini in the egg mixture and then into the bread crumb mix, pressing down on the crumbs. Then repeat the same process again to get that extra thick crust: dip once more in the egg mixture, then in the crumbs.
4. Place zucchini on the baking sheet and spray the tops with oil. Bake 8-10 minutes, turn and spray if needed, and baked an additional five minutes. Remove the baked zucchini fries from the baking sheet and serve hot with the spicy dip. Enjoy!
