Ingredients list for the Baked Chicken Breasts

  • 4 chicken breasts, skinless and boneless
  • 4 tablespoons soy sauce
  • 2 tablespoons Sriracha
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar (or white wine vinegar)
  • Juice of 1 lime
  • 2 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • Salt and fresh cracked pepper, to taste
  • 1 tablespoon olive oil
  • 2 teaspoons sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish
  • Fresh chopped cilantro, for garnish

Directions

1. Preheat your oven to 400ºF (200ºC). Lightly oil a baking dish or coat with nonstick spray.

2. In a saucepan, mix the honey, Sriracha, garlic, ginger, rice wine vinegar, soy sauce and lime juice together until well combined. Heat over medium heat until simmering. Turn off heat. Mix cornstarch with 2 teaspoons water and stir in the sauce.

3. Season chicken with salt and pepper, to taste. Arrange chicken breasts in the baking dish and top with 2/3 of the homemade sauce. Drizzle with a bit of olive oil and bake uncovered for 30-40 minutes, or until chicken’s internal temperature reaches 165°F (74°C).

4. Remove from oven, garnish with sesame seeds, sliced green onion and cilantro. Serve immediately over rice, bulgur or quinoa with remaining sauce on the side. Enjoy! ♥︎
