I love oatmeal and I used to consume it daily just sprinkled on my salad and raw vegetables or mixed into yogurt for breakfast. I adore its sweet taste very nice but also its texture. So the idea of using oatmeal in a bread was bound to please me! This oatmeal bread has a dense and compact crumb, an intense and slightly sweet flavor, with a crispy crust. It is simply excellent and I highly recommend it.
Ingredients list for oatmeal bread recipe
- 3 cups (300 g) of organic wheat flour, type 150
- 2 cups (200 g) of organic oat bran
- 1 packet of baker’s yeast
- 4 cups (1 liter) of warm water
- 1 teaspoon of salt
Directions
In a bowl, dissolve yeast in 2 cups of water and let stand, covered, for 15 min.
In the bowl of a food processor, add flour, oat bran, and salt. Stir well and make a well and pour the water/yeast mix. Mix everything well.
Knead with the robot (with hook) for 15 minutes at medium speed. The dough should be sticky. If the dough feels too dry or solid, add more warm water.
Cover the bowl with a clean cloth and let the dough rise for 1 hour in a warm place and away from drafts.
After 1 hour, press the dough with your fists.
Cut the dough into 8 pieces of about 5 1/4 ounces each (150g).
Let the dough stand again for 15 min.
Roll the balls by hand. Brush with water using a pastry brush and sprinkle with oat bran and flatten slightly.
Place on a baking sheet lined with parchment paper.
Let the dough rise one last time for 30 mn at room temperature.
In the meantime, preheat your oven to 400°F (200°c).
Bake for 40 minutes with a small bowl of water to add moisture, it will help create a nice crust.
Remove from oven and let cool on the wire rack.

Whole wheat flour (type 150) is the most complete meal. Its rates in fiber, vitamins and minerals, are higher than in other flours. It presents a real interest in nutrition, but also in taste as to truly discover the flavors of wheat.
It is particularly suitable for preparations of dieting (for its satiating effect and by its glycemic index lower than that of white flour),those of the diet of diabetics (in a balanced diet and follow up on doctor’s advice ) and for those people suffering from constipation.
Namely: the concentration of pesticides is mainly in the peel of cereals during processing, it is advisable when one uses complete products to favor those from organic farming.
