Editor: Camille, if your first kombucha drink preparation  is too acid, don’t drink it and start another culture with the same SCOBY, but replace vinegar by 1/2 cup of your previous preparation. Making kombucha tea is not very complicated and you’ll “feel it” more and more with practice. You’ll be able to anticipate the best moment to stop the fermentation process. Also, avoid smoking in the same room where you store the preparation.
