Honey Roasted Almonds with Cinnamon — A quick and easy recipe for warm, cozy skillet-roasted almonds. Coated in a honey glaze spiced with cinnamon, they make for an addicting snack for any occasion!

- 2 cups unsalted almonds
- 1 tablespoons sugar
- 2 tablespoons honey
- 1 knob butter
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt

Directions
1. Prepare a cookie sheet with parchment paper and set aside.
2. In a small bowl, whisk together sugar, honey, cinnamon and salt.
3. In a large, nonstick skillet over medium-low heat, add butter and the sugar/honey mixture. Stir until melted and smooth.
4. Add almonds and increase heat to medium, stirring until almonds are thoroughly coated. Switch to stirring occasionally, allowing almonds to soak in the sugar mixture. Watch the almonds closely, being careful not to burn them. Stir until the sugar mixture is almost completely soaked up and the almonds are sticky. This will take about 3-5 minutes.
5. Spread almonds onto the prepared baking sheet on an even layer. Set the baking sheet on a cooling rack and allow to cool down for 1 hour. Enjoy!
