Directions

1. To make the roasted almonds: Prepare a cookie sheet with parchment paper and set aside.

2. In a small bowl, whisk together sugar, honey, cinnamon, and salt.

3. In a large, nonstick skillet over medium-low heat, add butter and the sugar/honey mixture. Stir until melted and smooth.

4. Add almonds and increase heat to medium, stirring until almonds are thoroughly coated. Switch to stirring occasionally, allowing almonds to soak in the sugar mixture. Watch the almonds closely, being careful not to burn them. Stir until the sugar mixture is almost completely soaked up and the almonds are sticky. This will take about 3-5 minutes.

5. Spread almonds onto the prepared baking sheet on an even layer. Set the baking sheet on a cooling rack and allow the honey roasted almonds to cool down for 1 hour. Enjoy!
