Cut the washed but unpeeled zucchini into thin strips (help yourself with a mandoline or by hand, but strips will be thicker)
Cook for a few minutes in a pan with a little olive oil (they must remain firm but flexible) if you want a lighter version, steam cook zucchinis for 2-3 minutes.
Place them on absorbent paper and let them cool.
Mix your 10 ounces (300 g) of fish fillet finely chopped with white onion, a carrot ( peeled), grated cheese, and egg.
Salt and pepper. Add the chopped chives (2 tablespoons)
Add a little grated fresh ginger or powdered (+ – 1/ 4 teaspoon, according to your taste).
Mix well.
Cut the salmon into thin strips using a sharp knife.
Put a slice of salmon on a slice of zucchini, add a scoop of stuffing (pressing with the hands), then roll up. Depending on the amount of salmon, put a slice or half slice of zucchini on the strap.
Form the “rolls”.
Place them in a mini muffin pan for baking or in a steamer basket for steaming (I used a bamboo basket that I put on a pot of hot water).
Cook 5 minutes in steam. If you opt for baking in the oven: 15-20 minutes at 360 ° F (180 °).
You present the zucchini rolls with toothpicks and accompany with the remaining zucchini strips.
My advice:
The recipe would be much lighter if you cook the rolls with steam.
Choose the very best quality for your fish for a very tasty dish.
It is possible to replace the ginger with various spices and lemon.
I add cheese to my fish balls, it makes them softer. If you don’t like it, you can put a bit of bread soaked in milk in the filling.
Cooking in the mini muffin silicone pans is easier, the rolls come off easily after cooking: just remove the mold gently sliding two bands on the sides and pull, it glides on its own.
You can taste these as cold appetizers by serving them with a little lemon curd sauce with chives.
