Directions

1. Preheat your oven to 425°F (220ºC).

2. Add the four cheese mix and cream cheese to a large microwave-safe bowl. Melt in the microwave using 30-second intervals, until cheese is completely melted and smooth. 2 or 3 steps should be okay. Do not try to microwave the full time at once because some of the cheese will overcook.

3. Add almond flour, coconut flour, Italian herbs, and egg to the melted cheese.  Knead with a spatula until the dough is uniform and a bit sticky.

4. Allow the dough to cool slightly, which will also make it less sticky and easier to work with. Roll the dough out between two sheets of parchment paper until 1/5-inch (5mm) thick. Peel top sheet of parchment paper off of dough. Move the dough onto a baking sheet.

5. Spread half the cheese topping over the dough, leaving a 1/2 inch (1.5 cm) perimeter. Bake for about 5-6 minutes, or until edges are golden and puffy.

6. Evenly sprinkle the surface of dough with remaining cheese topping. Bake for 3-5 more minutes or until cheese is melted. Garnish with fresh chopped parsley before slicing and serving. Enjoy!

Notes:

  • We call for both almond and coconut flour because the coconut flour helps absorb the liquid.

I tried it and it tastes OK. Just seems a little dry. Do you think oat fiber would work instead of coconut flour?

Delicious. I used a double boiler to melt cheese. Came out perfect.

Looks yummy! But I have the same question. What cheese do I use to put on top if I’m using it in dough ? Otherwise looks simple, thanks

Question, if I'm melting the cheese on the ingredients list for the dough, what "cheese topping" am I sprinkling on top of the dough?
