Loaded with roasted nuts and dried fruits, spiced with cinnamon and cardamon and with a unique tart citrus flavor, this totally decadent Christmas jam is perfect to eat atop fresh scones or biscuits for maximum enjoyment. Ingredient list for Christmas Jam Recipe
- 7 oz (200g) of dried figs
- 2 1/2 oz (70g) of shelled walnuts
- 2 1/2 oz (70g) almonds
- 2 lemons
- 1 3/4 oz (50g) of raisins
- 1 orange
- 3 1/2 oz (100g) apricots
- 10 dates
- 2/3 lb (300g) granulated sugar
- 1 stick of cinnamon
- 4 cardamom pod
- 1 star anise
- A pinch (2g) agar agar
- Water
Directions
1. Preheat your oven to 360°F (180°C). 2. Spread the walnuts and almonds on a baking sheet and roast in the oven for 15 minutes. Let cool and set aside. 3. Meanwhile, zest lemons and orange, then collect the juice. 4. Cut the figs and apricots thinly, pit the dates and split them. 5. In a saucepan , boil 1/3 cup (75mL) of water with sugar, citrus juice, zest and spices. 6. Add the chopped nuts and raisins. Simmer for 5 minutes, then cook for 8 minutes over high heat. 7. Then add the walnuts and almonds and cook until the jam reaches 220°F (105°C). 8. Sprinkle agar agar and keep cooking for one minute more. You can lightly mix the jam. 9. Fill you sterilized jars, close them immediately and return upside down to seal until they cool completely. Print beautiful labels, then cut and paste back to back to form a double-sided label. Tie the label with a ribbon and slide a wooden spoon on the side to make a lovely holiday gift!
