This beet smoothie is also an original drink for an aperitif, so I advise you to present it in smaller glasses just like verrines.

Ingredients you will need for the Beet Smoothie recipe
For 8 beet verrines:
- 2 large cooked red beets
- A Greek yoghurt
- 1 3/4 ounces (50g) of fresh goat cheese
- juice of 1/2 orange
- 2 tbsp olive oil
- 2 tbsp walnuts, vinegar
- Salt and pepper
- Some sprouts for decoration
Directions
Gather all ingredients in a blender or food processor and blend for a long time.
If you think the consistency is too thick, lengthen it with a little orange juice.
Taste and adjust seasoning if necessary.
Pour into glasses.
Top with a little crumbled goat cheese and sprouts (which can be replaced with chopped chives). Enjoy!
