Ingredients you will need for the Beet & Yoghurt Smoothie recipe
For 8 beet verrines:
- 2 large cooked red beets
- A Greek yoghurt
- 1 3/4 ounces (50g) of fresh goat cheese
- juice of 1/2 orange
- 2 tbsp olive oil
- 2 tbsp walnuts vinegar
- Salt and pepper
- Some sprouts for decoration
Instructions
Gather all ingredients in a blender or food-processor and blend for a long grout.
If you think the consistency too thick lengthen with a little orange juice.
Taste and adjust seasoning if necessary.
Pour into glasses.
Top with a little crumbled goat cheese and sprouts (which can be replaced with chopped chives). Enjoy!
