With simple ingredients like chicken breasts, spinach, garlic, cream cheese, mozzarella cheese, spices, and seasoning, you’ll have yourself this delicious creamy chicken casserole in less than 40 minutes of preparation. In our opinion, this casserole isn’t complete without the bubbly mozzarella topping. It’s the perfect chicken dinner casserole for busy weeknights!
Key Ingredients for the chicken casserole
- Chicken breasts: fresh or thawed. If too thick, you can slice them horizontally to make cutlets; this way, they will cook faster, and you won’t get pink, undercooked chicken.
- Cream cheese: This is the heart and spirit of this casserole. Cream cheese brings chunkiness and binds all the flavors together.
- Spinach: Fresh spinach, not canned ;)
- Olive oil
- Mozzarella: You can also try a cheese blend like Mozzarella/Provolone/Parmesan.

Top the cream cheese with sauteed spinach. We sauté the spinach first, so it renders some of its water and doesn’t make the chicken casserole soggy when baking.

Sprinkle the chicken casserole with shredded mozzarella cheese before popping in the oven at 400ºF (200ºC).

Directions
1. To prepare the spinach chicken casserole: Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplock bag along with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken breasts are covered in the marinade. Set aside for 10-15 minutes on the counter while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).
2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil and set aside.
3. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken breasts and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top.
4. Bake the spinach chicken casserole for 20-30 minutes. Chicken casserole is done when cooked to an internal temperature of 165˚F (75°C). Serve the spinach chicken casserole warm with a side of cauliflower rice or baked veggies. Enjoy!

I made this last night and it was fantastic! I used an herbed cream cheese (only 1-1.5Tb per breast, which was *plenty*). I also doubled the spinach!

Great recipe with minimal ingredients. I used 3 pieces of chicken (cut lengthwise) and a whole bag of spinach. The only thing I would say is it didn’t need that much cream cheese. Way too much was the vote from my family. I will be making this again, for sure, but will adjust the cream cheese.

I’ve made this twice. It’s great but I do have one suggestion. By seasoning the cream cheese before spreading it on the chicken was an improvement.
