Directions

1. To make the lemon iced tea: Bring 2 cups of water with ginger (if using) and Indian tea leaves to a boil in a small saucepan. When boiling, remove the pot from the heat and let it rest for 5-6 minutes. Pass through a sieve and discard the tea leaves. If you like a stronger tea, steep for a couple of minutes longer.

2. Pour the hot tea concentrate into the pitcher. Add the sugar and whisk until it is dissolved. Add 2 liters (8 cups) of cold water and the freshly squeezed lemon juice. Adjust the sweetness by adding more sugar if desired. Chill the tea for at least 2 hours.

3. When ready to serve, add some ice cubes to the pitcher. Serve the iced lemon tea in individual glasses with plenty of ice, and garnish with lemon slices and mint leaves. Enjoy!

Tips for the lemon iced tea recipe

  • You can also add the sliced lemon to the pitcher, but only if you are planning to drink the tea the same day. After a day in the refrigerator, sliced lemons tend to impart a bitter taste to your drinks.
  • If you’re unsure whether your pitcher is heat-proof and can handle the temperature change, chill the hot tea in the saucepan, then transfer it to the pitcher once it’s cooled.
  • I recommend using real fresh lemons that you slice and squeeze! Go for the real thing!
