Here is a nice “fruit pizza” dessert for you: really delicious with a good flavored honey! This dessert is named “pizza” only because its dough and cooking method! Ask your baker for a pizza dough (or bread dough, it is almost the same), or you can make your own following the recipes here.

For a large pizza:
Preparation: 10 minutes
Cooking time: 5 minutes

Equipment: a pizza pan with holes, a barbecue with a lid (the classic Weber “Smokey Joe” Grill is perfect for this, and not so expensive), a pizza stone, a rolling pin, a bowl.

Ingredients List: Apricot Pizza Recipe

  • 1 ball of pizza dough
  • 5 tablespoons of ground almonds
  • 2lbs (1 kg) of apricots
  • 2 large tablespoons of liquid honey
  • 1 ounce (30g) blanched unsalted pistachios

Cooking Instructions

Wash and dry apricots. Cut in half and remove pits.

Spread the pizza dough onto a generously floured surface. Line the pizza pan with dough, taking care to fold the edges to form a round crust.

Spread ground almonds on the dough to absorb the apricot juice during cooking.

Then place the apricot halves, crushed pistachios, and honey.

Place the pizza pan on the preheated pizza stone (10 minutes on the grill). Close the grill lid and cook for about 5 minutes.

Be careful, according to the warmth of your fire, cooking can be very fast. Note that the edge of the pizza won’t darken, so do not rely on color to determine doneness.

Lifting the pizza from the pan, you can quickly see if the pizza is cooked. If so, just unmold pizza without problem on a platter.
