8 Grilled Vegetable Recipes: Grilled Zucchini with BBQ Sauce

Grilled Zucchini with the best BBQ Sauce is a quick and simple Grilled Zucchini recipe guaranteed to impress! Backyard barbecue, with a vegetarian twist!
Ingredients you need for the Grilled Zucchini with BBQ Sauce
Directions
1. Preheat your grill and combine olive oil, lime juice, salt, pepper and Italian seasoning in a large bowl. Marinate vegetables into the olive oil and lime juice mixture.
2. In the meantime, combine the bbq sauce with all ingredients together (lime juice, olive oil, honey, fresh ginger, salt and pepper, cayenne pepper).
3. When ready, drain veggies from marinade and thread onto skewers. Grill on all sides for 2 – 3 minutes, then brush generously with the bbq sauce and finish finish, until slightly charred but still crunchy.
4. Serve grilled veggies skewers as is or over rice, over cauliflower rice, and garnish with fresh herbs, such as cilantro, parsley or green onion and the remaining sauce on the side. Enjoy!
Note: Grilled vegetables are better when fresh, but they will keep in the refrigerator up to 2-3 days and can be re-used in a salad.
